- 3.9 oz Butter
- 3.5 oz Wheat flour
- 2.8 oz Whole wheat flour
- 1 stk Egg
- 1 knsp Salt
Filling
- 2 stk Onions
- 1.3 lb Potatoes
- 5.3 oz Diced ham
- 4 stk Eggs
- 7.1 oz Crème fraîche
- 1.8 oz Feta cheese
- 1 knsp Salt and pepper
- 0.3 bundt Fresh parsley
Instructions

Make the tart base
- Cut the butter into small cubes.
- Rub the butter into the wheat and whole wheat flour.
- Add egg and salt, and bring the dough together quickly.
- Press the dough into a tart tin.

Blind-bake the base
- Preheat the oven to 180°C fan.
- Blind-bake the tart base for 10 minutes.

Prepare the filling
- Peel the onions and slice them.
- Peel the potatoes and cut them into thin slices.
- Roughly chop the parsley.

Assemble the tart
- Spread onion, potatoes and diced ham in the blind-baked base.
- Whisk the eggs with crème fraîche and salt and pepper.
- Pour the egg mixture over the filling.
- Crumble feta over the top and sprinkle with parsley.

Bake the tart
- Bake at 180°C fan for 25–30 minutes.
- Rotate the tin partway through if the oven bakes unevenly.
