Suggestions
- • Serve as a side while the corn is still hot so the butter melts.
Side Pairings
- • Grilled meat or fish.
Dessert Pairings
- • Fresh fruit.
Storage
Fresh
- • Duration: 1 days
- • Temperature: 5°C
- • Method: Store cooled ears in a closed container in the fridge. The butter keeps covered in the fridge for a couple of days.
Frozen
- • Duration: 1 months
- • Temperature: -18°C
- • Method: Freeze the corn without butter if you like. Thaw in the fridge and warm gently.
Reheating
- • Microwave: Warm briefly in the microwave under a damp paper towel. Add lime butter afterward. (Microwave)
Tips
Preparation
- • The butter should be soft so zest and juice mix evenly.
Cooking
- • Wattage and ear size set the time. Start on the short side and check.
- • Open carefully. The steam is hot, even when the ear is done.
Serving
- • Butter while the corn is hot so the lime butter settles into the kernels.
Variations
Flavor
- A little more zest if you want more aroma without more acidity.
- A small pinch of chili flakes in the butter adds warmth without taking over.
Method
- Without husk: remove husk and silk, wrap the ear in a damp paper towel and microwave for the same time.
- Do one ear at a time the first time, until you know your microwave’s wattage.
Toppings
- Fresh cilantro or parsley on top, if you have it.
