    • 600 g Chicken breast or chicken thighs
    • 600 g Potato wedges
    • 3 spsk Green pesto
    • 2 spsk Oil
    • 1 tsk Salt
    • 0.5 tsk Pepper

    Prepare the dish

    1. Preheat the oven or grill with lid to about 200°C.
    2. Toss the potatoes with oil, salt and pepper in a baking dish.

    Add chicken and pesto

    1. Place the chicken on top of the potatoes.
    2. Spread pesto over the chicken.
    3. Bake for about 30–35 minutes, until the potatoes are tender and the chicken is cooked through (core temperature 75°C).

    1. Let the dish rest a few minutes before serving.
