Chicken in a roasting dish
- 1.3 lb Chicken thighs or chicken breast
- 1.1 lb Potatoes in wedges
- 2 stk Carrots in large pieces
- 1 stk Onion in wedges
- 2 tbsp Oil
- 1 tsp Dried thyme or oregano
- 1 tsp Salt
- ½ tsp Pepper
Instructions

Prepare the roasting dish
- Preheat the oven or lidded grill to about 200°C.
- Toss potatoes, carrots and onion with oil, salt and pepper in a roasting dish.

Add the chicken
- Place the chicken on top of the vegetables.
- Drizzle with a little extra oil and sprinkle with thyme.
- Bake for about 30–35 minutes until the chicken is cooked through and the vegetables are tender.
