Quand le poulet est devenu sec

Réponse courte

Take the chicken off the heat. Rest a few minutes. Slice thinly across the grain and serve with sauce, stock or fat. If the centre is still raw, cook only to a safe core temperature — no further.

Valable quand

  • The chicken is or has been cooking in a pan, oven or pot.
  • The goal is edible texture — not restoring juiciness from before overcooking.
  • A raw centre with a dry surface needs careful finishing, not more dry heat.

Ce qu'il te faut

  • The dry chicken
  • Sharp knife
  • Sauce, stock or oil/butter
  • Meat thermometer if the centre is uncertain
  • Plate for resting

Étape par étape

  1. 1

Take the chicken off the heat. Cut into the thickest part, or check the temperature.

    • Matériel: Meat thermometer and knife.
    • Chaleur: No heat during the check.
    • Temps: 1 minute.
    • Aspect: Juices are sparse; the meat feels firm. The centre should have no raw pink zones at 74 °C / 165 °F.
    • Si ça tourne mal: Cooking longer to “save it” — it only gets drier.
    • Prêt quand: You know whether the centre is safe and whether dryness is surface or throughout.
  2. 2

Rest the chicken 3–5 minutes. Cut thin slices across the grain.

    • Matériel: Sharp knife and cutting board.
    • Chaleur: No heat.
    • Temps: 3–5 minutes rest plus slicing.
    • Aspect: Thin slices feel less dry in the mouth than thick chunks.
    • Si ça tourne mal: Thick chunks with the grain — dryness becomes more obvious.
    • Prêt quand: The chicken is sliced for serving.
  3. 3

Spoon warm sauce, stock or a little fat over the slices just before serving. Reheat only briefly if needed.

    • Matériel: Small pot or pan for sauce/liquid.
    • Chaleur: Low heat only to warm the sauce.
    • Temps: 1–2 minutes.
    • Aspect: Slices are moist on the surface without cooking further dry.
    • Si ça tourne mal: Long reheating in a dry pan — dryness worsens.
    • Prêt quand: The chicken is ready to serve with added moisture.

Si ce n'est pas comme prévu

  • More cooking time to “soften” it

    dries the meat further.

  • Thin breasts on the same timing as whole thighs

    breast dries first.

  • Slicing with the grain in thick chunks

    dryness feels worse.

  • No sauce or rest

the last moisture is lost on the board.

Sécurité alimentaire

Poultry must reach at least 74 °C / 165 °F in the thickest part. A dry surface is not the same as a safe centre.

C'est prêt quand: The chicken is cooked through and edible with moisture from sauce or slicing, or it is judged too dry to save as a main piece.
