Methods
- How to salt at the right time
Season cooking water clearly, salt meat well ahead or immediately before cooking, and finish dishes a little at a time. Taste after every addition.
- How to fix flat-tasting food
Diagnose first: does the dish lack salt, acid, fat, or fresh heat and aroma? Fix one thing at a time and taste between changes.
- How to fix food that is too sour
Soften acidity with fat, a little sweetness, dilution and correct salt balance. Do not simply dump in a large amount of sugar.
- How to make food less spicy
Soften chili heat with dairy or another fat, starch and more of the dish's base. Use acid carefully and do not add more chili.
