Beef bourguignon – Burgundian beef stew
A Burgundian beef stew with red wine, mushrooms, onions and bacon. The meat braises slowly until it almost falls apart.

Stew
- 800 g Beef chuck or shoulder, diced (3–4 cm)
- 150 g Bacon, in strips
- 200 g Mushrooms, quartered
- 2 stk Onions, roughly chopped
- 2 stk Carrots, sliced
- 3 fed Garlic cloves, crushed
- 5 dl Red wine (Burgundy-style)
- 2 dl Beef stock
- 2 spsk Tomato paste
- 2 spsk Olive oil
- 1 spsk Flour (for thickening)
- 2 stk Bay leaves
- 1 tsk Dried thyme

Brown the meat
- Pat the meat dry. Brown it in olive oil in a hot pot in batches — do not crowd. Set aside.

Fry bacon and vegetables
- Fry the bacon in the same pot until lightly crisp. Add onion, carrot and garlic. Sauté for 5 minutes.
- Sprinkle flour over and stir for one minute. Add tomato paste.

Simmer with wine
- Return the meat. Pour in wine and stock. Add bay leaves and thyme. Bring to the boil.
- Cover and place the pot in the oven at 160 °C for 2 hours. Add mushrooms for the last half hour.

Serve
- Remove the bay leaves. Season with salt and pepper. Serve with mashed potatoes or bread.
