A Dalmatian side of Swiss chard and potatoes tossed in garlic oil. Simple, honest and ideal alongside grilled fish.

- 500 g Swiss chard (leaves and stems)
- 400 g potatoes, peeled and cubed
- 3 fed garlic, finely chopped
- 4 spsk olive oil
- 1 tsk salt
Instructions

Boil potatoes
- Boil the potato cubes in salted water for about 12–15 minutes until tender.

Blanch chard
- Add the chard leaves for the last 3–4 minutes of cooking.
- Drain everything well.

Toss in garlic oil
- Heat the olive oil and fry the garlic until golden.
- Toss potatoes and chard in the oil. Season with salt.

- • Use leaf beet as a substitute if Swiss chard is unavailable.
Cooking
- • Separate the stems and boil them a couple of minutes before the leaves.
