  • Tart shells

    • 8.8 oz all-purpose flour
    • 4.4 oz cold butter, diced
    • 1 stk egg yolk
    • 2 tbsp ice-cold water
    • ½ tsp salt
  • Filling

    • 2.6 oz butter, melted
    • 5.3 oz dark brown sugar
    • about 0.4 cup dark syrup or corn syrup
    • 1 stk egg
    • 1 tsp vanilla extract
    • 1 tbsp vinegar
    • ½ tsp salt

    Make the tart shells

    1. Combine flour and salt. Cut in cold butter until it resembles coarse breadcrumbs. Add egg yolk and water, gather into a dough.
    2. Chill the dough for 30 minutes. Roll out and cut circles for 12 muffin cups.

    Make the filling

    1. Whisk the melted butter, brown sugar and syrup together. Add the egg, vanilla, vinegar and salt. Stir until smooth.

    Fill and bake

    1. Divide filling among the prepared tart shells – fill only about ⅔ full. Overfilling will cause them to bubble over.
    2. Bake at 190 °C for 18-20 minutes until the filling is set and the edges are golden. Cool in the pan for 10 minutes.
