Chicken meatballs
- 14.1 oz Minced chicken
- 1 stk Egg
- about 0.4 cup Rolled oats
- 1 stk Onion, finely grated
- 1.7 fl oz Milk
- 1 tsp Salt
- ½ tsp Pepper
- 1 tbsp Oil for frying
Yoghurt dressing
- 7.1 oz Skyr or Greek yoghurt
- 1 tsp Dijon mustard
- 1 tbsp Lemon juice
- 1 tsp Honey
- ¼ tsp Salt
- ¼ tsp Pepper
Sandwich
- 4 stk Wholegrain burger buns or rye rolls
- 1 håndfuld Lettuce
- 0.5 stk Cucumber, sliced
- 2 stk Tomatoes, sliced
- 5.3 oz Red cabbage, finely shredded (optionally pickled)

Mix the ingredients
- Stir minced chicken, egg, oats, finely grated onion, milk, salt and pepper together into an even mixture.

Let the mixture rest
- Let the mixture rest for 5 minutes so the oats absorb the liquid.

Shape and fry
- Heat oil in a pan over medium heat.
- Shape 8 small meatballs and fry for 6–8 minutes in total until golden and cooked through.

Season the dressing
- Stir skyr or yoghurt together with Dijon mustard, lemon juice, honey, salt and pepper.

Build the layers
- Split the buns and place lettuce at the bottom.
- Place 2 meatballs in each and top with cucumber, tomato and red cabbage.
- Spread the yoghurt dressing and close the sandwiches.
