Chicken satay – Thai with peanut sauce

Satay
- 600 g Chicken thigh, cut into strips
- 1 spsk Turmeric
- 1 spsk Ground coriander
- 1 spsk Fish sauce
- 1 spsk Neutral oil
Peanut sauce
- 100 g Roasted peanuts, roughly blended
- 100 ml Coconut milk
- 1 spsk Red curry paste
- 1 spsk Palm sugar
- 1 spsk Tamarind paste

Marinate chicken
- Mix chicken strips with turmeric, coriander, fish sauce, and oil. Let marinate for at least 20 min (longer is better).

Make peanut sauce
- Heat coconut milk with curry paste. Add blended peanuts, palm sugar, and tamarind. Cook 3 min stirring until slightly thickened.

Grill the satay
- Thread chicken onto pre-soaked bamboo skewers. Grill over high heat 3–4 min per side until nicely charred.
