Crispy, golden waffles made from chickpeas and potatoes, filled with creamy yoghurt, fresh vegetables and herbs. A satisfying vegetarian lunch with plenty of flavour and good texture.

  • Chickpea and potato waffles

    • 1 dåse Chickpeas, drained and rinsed
    • 10.6 oz Potatoes, coarsely grated
    • 2 stk Eggs
    • 2 tbsp Wheat flour
    • 1 tbsp Olive oil
    • ¾ tsp Salt
    • ¼ tsp Pepper
  • Filling

    • about 0.8 cup Greek yoghurt
    • 1 tbsp Lemon juice
    • 1 håndfuld Fresh parsley, finely chopped
    • 1 stk Cucumber, diced small
    • 2 stk Tomatoes, diced
    • 1 håndfuld Rocket

    Mash the chickpeas

    1. Mash the chickpeas roughly with a fork or immersion blender.

    Mix the batter

    1. Squeeze as much moisture as possible out of the grated potatoes.
    2. Mix the potatoes, mashed chickpeas, eggs, flour, oil, salt and pepper into a firm batter.

    Bake crispy waffles

    1. Heat the waffle iron and grease it lightly.
    2. Spread the batter in the iron and press lightly together.
    3. Bake the waffles until golden and crispy.

    Stir the yoghurt dressing

    1. Stir the yoghurt together with lemon juice and parsley.

    Prepare the vegetables

    1. Cut the cucumber and tomato into small dice.

    Top the waffles

    1. Top the warm waffles with yoghurt dressing, vegetables and rocket.
    2. Serve open or as a sandwich with a waffle on top.
