Choux pastry puffs

Light, golden choux puffs with a crisp shell and hollow crumb, ready for cream, custard or something simple. A classic that needs a calm oven and dough with the right tension.

  • Choux pastry dough

    • 2.6 oz Butter
    • about 0.6 cup Water
    • 1 knsp Salt
    • 3.5 oz Wheat flour
    • 3 stk Eggs

    Preheat the oven

    1. Heat the oven to 200°C conventional heat (top and bottom heat).
    2. Take the eggs out of the fridge so they come to room temperature.

    Melt butter, water and salt

    1. Put water, butter and salt in a saucepan.
    2. Let it melt together gently.

    Stir in the flour

    1. Add the wheat flour all at once.
    2. Stir vigorously until the dough comes together and leaves the pan.

    Let the dough cool slightly

    1. Take the pan off the heat.
    2. Let the dough cool for 10–15 minutes until lukewarm, not hot.

    Add the eggs a little at a time

    1. Beat the eggs lightly and weigh them if you can: about 150 g eggs without shells in total.
    2. Stir in the egg a little at a time until the dough is smooth, glossy and even.
    3. Stop when the dough is pliable and holds its shape – it must not become too thin.

    Pipe the puffs

    1. Put the dough in a piping bag with a large star nozzle.
    2. Pipe about 10 puffs onto a baking sheet lined with baking paper.

    Bake the choux puffs

    1. Bake in the middle of the oven for 25–30 minutes until golden and light.
    2. Do not open the oven for the first 20 minutes – or they may collapse.

    1. Take the tray out and let the choux puffs cool on a wire rack.
