  • about 0.8 cup milk
  • 2.6 oz butter
  • 2.6 oz sugar
  • 0.9 oz fresh yeast
  • 1 stk egg
  • 2 tsp cinnamon

  • 2.6 oz dark chocolate (roughly chopped)

    Melt the butter

    1. Melt the butter in a saucepan and add the milk. Heat to finger-warm temperature (about 37 °C).

    Mix the dough

    1. Dissolve the yeast in the warm milk mixture. Add sugar, egg, cinnamon, orange zest and salt. Stir in the flour a little at a time.
    2. Knead into a smooth dough – it can be slightly moist.

    Add the chocolate

    1. Fold the roughly chopped chocolate into the dough.
    2. Knead the chocolate in lightly without overworking the dough.

    Rising

    1. Let the dough rise, covered, in a warm place for 20–25 minutes.

    Shape the buns

    1. Divide the dough into about 12 pieces and shape into round buns. Place on baking paper and let rise for 10 minutes.
    2. Brush with beaten egg.

    Baking

    1. Bake in the middle of the oven at 200 °C (convection 180 °C) for about 12–15 minutes.
