Classic vegetarian chili sin carne in a pot: beans, tomato and bloomed spices without meat. Its own recipe identity – not a “no meat” variant of con carne. The Trangia version is outdoor.

    • 2 stk Onions
    • 3 fed Garlic cloves
    • 1 stk Red bell pepper
    • 2 tbsp Oil
    • 2 dåse Chopped tomatoes (about 400 g each)
    • 1 dåse Kidney beans, drained
    • 1 dåse Black beans, drained
    • about 0.6 cup Vegetable stock or water
    • 2 tsp Ground cumin
    • 2 tsp Paprika
    • 1 tsp Chili powder
    • 1 tsp Oregano
    • tsp Salt
    • 1 tbsp Lime or lemon juice (to finish)

    Sauté the vegetables

    1. Heat oil in a pot. Sauté onion and pepper until soft. Add garlic and stir one minute.

    Bloom the spices

    1. Take the pot off the heat. Stir cumin, paprika, chilli powder and oregano into the oil so the spices wake without burning.

    Simmer

    1. Add tomatoes, both beans and stock. Bring to a boil, then low simmer 45–70 minutes. Stir now and then.
    2. Season with salt and lime/lemon juice. Rest a few minutes off the heat.
