- about 0.6 cup cream
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp pepper
- 1 tbsp Butter for greasing

- 6 stk cherry tomatoes
- 1 bundt chives

Preheat the oven and prepare the dish
- Preheat the oven to 200°C fan.
- Grease an oven-proof dish thoroughly with butter.

Whisk the egg mixture
- Crack the eggs into a large bowl and whisk lightly.
- Add cream, baking powder, salt and freshly ground pepper.
- Whisk the egg mixture until light and fluffy with an electric mixer (1–2 minutes) – it should become pale and frothy.

Bake the omelette
- Pour the egg mixture into the greased dish.
- Bake for about 35 minutes, until the omelette is golden, risen and set in the middle.
- Tip: The baking builds flavour – let it get a good colour, but keep an eye on it during the last 5 minutes.

Fry the bacon and prepare the topping
- Fry the bacon until crispy in a pan and let it drain on kitchen paper.
- Slice or halve the cherry tomatoes.
- Rinse and finely chop the chives.
