    • about 0.6 cup cream
    • 1 tsp baking powder
    • ½ tsp salt
    • ½ tsp pepper
    • 1 tbsp Butter for greasing

    • 1 bundt chives

    Preheat the oven and prepare the dish

    1. Preheat the oven to 200°C fan.
    2. Grease an oven-proof dish thoroughly with butter.

    Whisk the egg mixture

    1. Crack the eggs into a large bowl and whisk lightly.
    2. Add cream, baking powder, salt and freshly ground pepper.
    3. Whisk the egg mixture until light and fluffy with an electric mixer (1–2 minutes) – it should become pale and frothy.

    Bake the omelette

    1. Pour the egg mixture into the greased dish.
    2. Bake for about 35 minutes, until the omelette is golden, risen and set in the middle.
    3. Tip: The baking builds flavour – let it get a good colour, but keep an eye on it during the last 5 minutes.

    Fry the bacon and prepare the topping

    1. Fry the bacon until crispy in a pan and let it drain on kitchen paper.
    2. Slice or halve the cherry tomatoes.
    3. Rinse and finely chop the chives.

    Plate and serve

    1. Take the omelette out and serve it directly from the dish while it is warm and fluffy.
    2. Top with crispy bacon, tomato and a generous sprinkle of chives.
