Stovetop one-pot pasta: sauté onion and garlic, then cook the pasta in measured stock with tomato so the sauce emulsifies around it. Ready in about 25 minutes – a glossy tomato sauce, not lean camping food.

Pasta and sauce
- 2 tbsp Olive oil
- 1 stk Yellow onion, finely chopped
- 3 fed Garlic cloves, finely chopped
- 12.3 oz Short pasta (penne or fusilli)
- 14.1 oz Chopped tomatoes (canned)
- 3⅓ cup Vegetable stock (hot)
- 1 tsp Dried oregano
- 1 tsp Salt (or to taste)
- Freshly ground pepper
- 1.4 oz Parmesan, grated (optional)

Sauté the aromatics
- Warm the oil in a large pot over medium heat.
- Sauté the onion 3–4 minutes until soft and glossy – without browning hard.
- Add the garlic and stir 30–45 seconds until fragrant.

Add pasta and liquid
- Add pasta, chopped tomatoes, stock, oregano and salt to the pot.
- Stir well so the pasta sits under the liquid.

Simmer to a glossy sauce
- Bring to a boil, reduce to a rolling simmer, and rest the lid ajar.
- Stir from the bottom every 1–2 minutes for 10–12 minutes, until the pasta is al dente and the sauce is glossy and creamy.
- If it dries out before the pasta is done, add ½ dl stock. Season with pepper and more salt if needed.

Serve
- Take the pot off the heat. Stir in parmesan if using, and serve right away.

Tips
Preparation
- • Measure the stock before you start – one-pot depends on precise liquid, not “fill the pot”.

- • For gloss: leave 1–2 tbsp starchy pasta liquid in the pot when it is almost done.
