    • 1.1 lb Wheat flour (tipo 00 or all-purpose)
    • 1⅓ cup Lukewarm water
    • about 0.2 oz Dry yeast
    • tsp Salt
    • 1 tbsp Olive oil
  • Toppings (for 2–3 pizzas)

    • about 1.1 cup Pizza tomato sauce
    • 8.8 oz Mozzarella, grated or sliced
    • 1 tsp Dried oregano
    • 1 tbsp Olive oil for brushing

    Make the dough

    1. Stir dry yeast into lukewarm water. Add flour, salt and oil. Knead 8–10 minutes to a soft, elastic dough.

    Let the dough rise

    1. Place dough in a lightly oiled bowl, cover, and rise 45–60 minutes until airy.

    Shape and bake

    1. Preheat oven to 250 °C / 480 °F (or higher if possible). Preheat tray, stone or steel.
    2. Divide into 2–3 pieces. Stretch each into a round pizza. Brush the rim lightly with oil.
    3. Spread a thin sauce layer, mozzarella and oregano. Bake 8–12 minutes until the rim is golden and the centre bubbles.
