- 5 stk Large onions
- 2 fed Garlic
- 100 ml Dry white wine
- 800 ml Beef stock
- 1 bundt Fresh thyme
- 0.5 tsk Salt
- 0.3 tsk Freshly ground pepper
- 100 ml Heavy cream

- 4 stk Slices of bread
- 100 g Grated cheese

Prepare the onions and garlic
- Peel the onions and garlic.
- Slice the onions thinly and finely chop the garlic.

Caramelize the onions gently
- Melt the butter in a large pot.
- Add the onions and cook slowly, stirring regularly, until golden and sweet.
- Lower the heat if needed; they may turn deeply golden, but should not burn.

Add wine, stock and thyme
- Add the garlic and cook for 1 minute, just until fragrant.
- Pour in the white wine and boil for 2–3 minutes, so the alcohol cooks off and the flavor comes together.
- Add the stock and thyme, then simmer the soup for about 15 minutes.

Make the soup creamy
- Remove the thyme sprigs.
- Stir in the cream and season with salt and pepper.
- Keep the soup warm over low heat; do not let it boil vigorously after adding the cream.

- Place the bread slices on a baking sheet and scatter over the cheese.
- Bake at 200°C until the cheese is melted and golden, about 5–6 minutes.
