    • 100 ml Dry white wine
    • 800 ml Beef stock
    • 1 bundt Fresh thyme
    • 0.5 tsk Salt

    • 100 ml Heavy cream
  • Crisp cheese toast

    • 100 g Grated cheese

    Prepare the onions and garlic

    1. Peel the onions and garlic.
    2. Slice the onions thinly and finely chop the garlic.

    Caramelize the onions gently

    1. Melt the butter in a large pot.
    2. Add the onions and cook slowly, stirring regularly, until golden and sweet.
    3. Lower the heat if needed; they may turn deeply golden, but should not burn.

    Add wine, stock and thyme

    1. Add the garlic and cook for 1 minute, just until fragrant.
    2. Pour in the white wine and boil for 2–3 minutes, so the alcohol cooks off and the flavor comes together.
