    • 5 dl Double cream
    • 4 stk Egg yolks
    • 60 g Sugar
    • 1 stk Vanilla pod (or 1 tsp extract)
  • Caramel top

    • 4 spsk Demerara sugar

    Heat the cream

    1. Pour the cream into a saucepan. Split the vanilla pod and scrape the seeds into the cream. Heat until it just begins to steam — do not boil.

    Mix the egg mixture

    1. Whisk egg yolks and sugar gently — without making it frothy. Slowly pour in the hot cream while stirring.

    Bake in a water bath

    1. Divide the custard between 4 oven-safe ramekins. Place in a deep tray with hot water halfway up. Bake at 150 °C for 30–35 minutes.
    2. The custard is done when set at the edges but still has a slight wobble in the centre. Chill in the fridge for at least 3 hours.

    Torch the top

    1. Sprinkle a thin layer of demerara sugar over each custard. Use a kitchen torch (or oven grill close up) until the sugar is golden and crisp.
