    • 2.1 oz Red cheddar, grated
    • 2.1 oz Mature cheddar, grated
    • 1 tbsp Fresh thyme, finely chopped
    • 1 tsp Fresh rosemary, finely chopped
    • 3.2 oz Wheat flour
    • ¼ tsp Salt
    • 2 tbsp Whole milk
    • about 1.1 oz Butter, cold

    Make the dough

    1. Mix the wheat flour and salt in a bowl.
    2. Rub the cold butter into the flour until it looks like coarse sand.
    3. Add the grated cheddar and the finely chopped herbs.
    4. Stir in the milk a little at a time and bring the dough together.

    Shape the cheese sticks

    1. Roll the dough out to about 0.5 cm thick.
    2. Cut the dough into long sticks.
    3. Place them on a baking sheet lined with parchment.

    Bake the cheese sticks

    1. Bake at 200°C for about 12–15 minutes until golden and crisp.
    2. Let them cool slightly before serving.
