Pourgouri – Cypriot bulgur pilaf

Ingredients

  • 300 g Coarse bulgur
  • 1 stk Onion, finely chopped
  • 200 g Crushed tomatoes
  • 600 ml Vegetable stock
  • 2 spsk Olive oil
  • 1 tsk Salt and black pepper

    Sauté the onion

    1. Heat the oil in a pot and sauté the onion until soft without browning.

    Cook the bulgur

    1. Add the bulgur and stir for a minute. Add tomatoes and stock, season, and bring to a boil.

    Steam until tender

    1. Cover and simmer over low heat for 15–18 minutes. Remove from the heat and rest for 5 minutes before serving.
