Bulgur cooked with onion, tomato, and stock. Pourgouri is an everyday Cypriot side dish, often served with yogurt or halloumi.

- 300 g Coarse bulgur
- 1 stk Onion, finely chopped
- 200 g Crushed tomatoes
- 600 ml Vegetable stock
- 2 spsk Olive oil
- 1 tsk Salt and black pepper

Sauté the onion
- Heat the oil in a pot and sauté the onion until soft without browning.

Cook the bulgur
- Add the bulgur and stir for a minute. Add tomatoes and stock, season, and bring to a boil.
Pot - 3
Steam until tender
- Cover and simmer over low heat for 15–18 minutes. Remove from the heat and rest for 5 minutes before serving.
