- 5.3 oz Dark chocolate (60–70%)
- 3 stk Eggs
- 1¼ cup Whipping cream
- 1 tbsp Sugar
- 1 knsp Salt
Instructions

Melt the chocolate
- Chop the chocolate roughly and melt it gently over a bain-marie.
- Remove from the heat and let it cool slightly.

- Separate the eggs into yolks and whites.
- Stir the yolks into the warm chocolate, one at a time.

- Whip the cream to soft peaks.
- Whisk the egg whites with sugar and salt to light, airy peaks.
