Dolmades – stuffed grape leaves with rice

Vine leaves stuffed with rice, herbs and lemon, simmered until tender. A classic meze – serve warm or cold with tzatziki.

    • 200 g Vine leaves (jarred)
    • 200 g Rice (long-grain)
    • 1 stk Onion, finely chopped
    • 3 spsk Fresh dill and mint, chopped
    • 3 spsk Olive oil
    • 2 spsk Lemon juice
    • 0 Salt and pepper

Instructions

    Make the filling

    1. Sauté onion in olive oil. Add rice and cook 2 minutes.
    2. Add 1 dl water and cook until absorbed. Let cool.
    3. Stir in the herbs, lemon juice, salt and pepper.

    Roll and simmer

    1. Place a spoonful of filling on each vine leaf. Fold in the sides and roll tightly.
    2. Place the rolls snugly in a pot. Pour water and olive oil over to just cover.
    3. Place a plate on top for weight. Simmer on low heat for 40–45 minutes.
