Dolmades – stuffed grape leaves with rice
Vine leaves stuffed with rice, herbs and lemon, simmered until tender. A classic meze – serve warm or cold with tzatziki.

- 200 g Vine leaves (jarred)
- 200 g Rice (long-grain)
- 1 stk Onion, finely chopped
- 3 spsk Fresh dill and mint, chopped
- 3 spsk Olive oil
- 2 spsk Lemon juice
- 0 Salt and pepper
Instructions

Make the filling
- Sauté onion in olive oil. Add rice and cook 2 minutes.
- Add 1 dl water and cook until absorbed. Let cool.
- Stir in the herbs, lemon juice, salt and pepper.

Roll and simmer
- Place a spoonful of filling on each vine leaf. Fold in the sides and roll tightly.
- Place the rolls snugly in a pot. Pour water and olive oil over to just cover.
- Place a plate on top for weight. Simmer on low heat for 40–45 minutes.
