Soft, honey-scented Japanese mini pancakes filled with anko (sweet red bean paste) – or Nutella and jam for a Nordic twist. Dorayaki is Japan's answer to the perfect snack, a favorite with both kids and adults.

Pancakes
- 150 g all-purpose flour
- 2 stk eggs
- 80 g sugar
- 2 spsk honey
- 1 tsk baking powder
- 1 dl water
Filling
- 200 g anko (sweet red bean paste) or Nutella/jam

Make the batter
- Whisk eggs and sugar until light and frothy. Add honey and mix well.
- Sift flour and baking powder over and fold in. Add water gradually until you have a smooth, flowing batter. Let it rest 15 minutes.

Cook the pancakes
- Heat a non-stick pan on medium-low. Pour about 2 tbsp batter in a round circle (7-8 cm). Cook until the surface bubbles and the bottom is golden (about 1½ minutes).
- Flip and cook 30 more seconds. The pancakes should be evenly golden. Make 16 pancakes total (2 per sandwich).

Assemble dorayaki
- Spread about 1 tbsp anko (or Nutella/jam) on the flat side of one pancake. Place another pancake on top. Press gently together.
