- 1 stk Onion (chopped)
- 3 fed Garlic (minced)
- 2 stk Carrots (sliced)
- 1 tbsp Tomato paste
- 1½ tsp Ground cumin
- ½ tsp Turmeric
- ½ tsp Paprika
- 4¼ cup Vegetable broth
- 2 tbsp Olive oil
- 0.5 stk Lemon (juice)
- 1 tsp Salt
- ½ tsp Black pepper

Sauté onion and garlic
- Heat olive oil in a pot and cook the onion and garlic for 3–4 minutes until soft and lightly golden.
- This builds a sweet, aromatic base.

Add vegetables and spices
- Add carrots, tomato paste, cumin, turmeric and paprika. Stir for 1 minute.
- Toast the spices briefly to release their flavor.

Simmer the soup
- Add lentils, broth, salt and pepper. Simmer for 20–25 minutes until the lentils are completely tender.
- Stir now and then so the lentils do not stick to the bottom.

Blend and season
- Blend the soup smooth with an immersion blender. Season with lemon juice, salt and extra cumin if needed.
- The soup should be creamy and lightly spiced.

Serve
- Serve the soup hot topped with fresh cilantro and, optionally, a drizzle of olive oil or a spoonful of yogurt.
- Serve with flatbread or pita if you like.
