  • 1 stk Onion (chopped)
  • 3 fed Garlic (minced)
  • 2 stk Carrots (sliced)
  • 1 tbsp Tomato paste
  • tsp Ground cumin
  • ½ tsp Turmeric
  • ½ tsp Paprika
  • cup Vegetable broth
  • 2 tbsp Olive oil
  • 0.5 stk Lemon (juice)
  • 1 tsp Salt

    Sauté onion and garlic

    1. Heat olive oil in a pot and cook the onion and garlic for 3–4 minutes until soft and lightly golden.

    Add vegetables and spices

    1. Add carrots, tomato paste, cumin, turmeric and paprika. Stir for 1 minute.
    2. Toast the spices briefly to release their flavor.

    Simmer the soup

    1. Add lentils, broth, salt and pepper. Simmer for 20–25 minutes until the lentils are completely tender.

    1. Blend the soup smooth with an immersion blender. Season with lemon juice, salt and extra cumin if needed.
