Tips

Preparation

  • Grandad's method: mix all at once — quick and simple.
  • If the dough is too soft, chill 10–15 minutes before rolling.

Cooking

  • Bake until golden — not dark. They firm up as they cool.

Serving

  • Grandad's tip: palette knife under, move 10–15 at a time.

Variations

Flavor

  • Grate a little lemon zest into the dough for freshness.
  • Add 1 tsp cinnamon to the dough for a warm spiced flavour.

Health

  • Swap half the flour for wholemeal wheat flour for more body.
  • Use less pearl sugar on top and more nuts.

Method

  • Chill the dough 15 minutes if it is very soft — then it is easier to roll.
  • Roll between two sheets of baking paper for the least mess.

Toppings

  • Use only pearl sugar (no nuts) for a fully classic top.
  • Swap the nuts for chopped almonds or pistachios.
