Falafel
- 8.5 oz chickpeas, drained
- 8.5 oz beans, drained
- 1 stk onion, finely chopped
- 2 fed garlic, crushed
- 1 stk carrot, grated
- 2 tbsp flour or breadcrumbs
- ½ tsp stock powder
- 1 tsp salt
- 1 knsp pepper
- 2 tbsp oil (for frying)
Fried cabbage
- 0.5 stk white cabbage, shredded
- 1 stk onion, in wedges
- 1 tbsp butter or oil
- 1 skv lemon, juice
- 1 tsp salt
Herb dressing
- about 0.8 cup low-fat or plain yoghurt
- 1 fed garlic, crushed
- 1 tbsp chives, finely chopped
- ½ tsp salt
- 1 skv lemon or apple cider vinegar

Make the falafel mixture
- Mash chickpeas and beans coarsely (a little texture is fine)
- Stir in onion, garlic, grated carrot, stock powder, salt and pepper
- Add flour/breadcrumbs and mix until the mixture can be shaped (add 1 tbsp more if too wet)

Shape and fry the falafel
- Shape 12–16 small falafel with damp hands or a spoon
- Heat oil in a pan and fry the falafel golden on all sides

Fry the cabbage
- Melt butter/oil in the pan and fry the onion for 1 minute
- Add the shredded cabbage and fry until soft with lightly caramelised edges
- Season with salt and a splash of lemon juice

Mix the herb dressing
- Mix yoghurt with garlic, chives, salt and a splash of lemon/vinegar
- Taste — the dressing should be fresh and lightly tart

Plate and serve
- Divide the fried cabbage onto plates
- Top with falafel and drizzle with herb dressing
- Serve with rye bread or a crisp salad on the side
