Fritule – Croatian mini doughnuts with rum & citrus | NordMad

Airy fried dough balls with citrus zest, rum and raisins. Fritule are Croatia's classic street dessert — here in a home version that smells of the Adriatic.

Ingredients

  • 300 g all-purpose flour
  • 2 stk eggs
  • 150 ml milk
  • 50 g sugar
  • 7 g instant yeast
  • 50 g raisins
  • 2 spsk rum (or rum extract)
  • 1 stk lemon zest, finely grated
  • 1 stk orange zest, finely grated
  • 500 ml oil for frying
  • 1 efter smag icing sugar for dusting

Instructions

    Make the dough

    1. Mix flour, sugar and yeast. Add eggs, warm milk, rum, lemon and orange zest. Stir to a thick, sticky batter.
    2. Fold in the raisins and let the dough rise covered for 45 minutes.

    Fry

    1. Heat the oil to about 170 °C. Shape small balls with two teaspoons and fry in batches for 3–4 minutes until golden.

    1. Let them drain on kitchen paper and dust generously with icing sugar. Serve warm.

Cooking

  • Keep the oil temperature stable — too hot gives raw centres, too cold gives greasy fritule.
