Airy fried dough balls with citrus zest, rum and raisins. Fritule are Croatia's classic street dessert — here in a home version that smells of the Adriatic.

- 300 g all-purpose flour
- 2 stk eggs
- 150 ml milk
- 50 g sugar
- 7 g instant yeast
- 50 g raisins
- 2 spsk rum (or rum extract)
- 1 stk lemon zest, finely grated
- 1 stk orange zest, finely grated
- 500 ml oil for frying
- 1 efter smag icing sugar for dusting
Instructions

Make the dough
- Mix flour, sugar and yeast. Add eggs, warm milk, rum, lemon and orange zest. Stir to a thick, sticky batter.
- Fold in the raisins and let the dough rise covered for 45 minutes.

Fry
- Heat the oil to about 170 °C. Shape small balls with two teaspoons and fry in batches for 3–4 minutes until golden.

Serve
- Let them drain on kitchen paper and dust generously with icing sugar. Serve warm.
