    • 500 g fresh green asparagus
    • 0.5 tsk salt
    • 0.3 tsk freshly ground pepper
  • Pan-seared

    • 1 spsk olive oil
  • Oven-roasted with Parmesan

    • 30 g Parmesan, freshly grated

    Prep the asparagus

    1. Preheat the oven to 200°C.
    2. Rinse the asparagus and snap off the woody end at the natural break point.
    3. Pat completely dry — it helps browning and keeps the roasted spears crisp.
    4. Divide the asparagus into two portions (for pan and for oven).

    Pan-seared asparagus

    1. Heat a pan well and add 1 tbsp olive oil.
    2. Add half the asparagus and cook 3–4 minutes, turning a few times, until spotted golden but still with bite.
    3. Season with a little salt and pepper.
    4. Turn off the heat and finish with a small squeeze of lemon.

    Oven-roasted asparagus with Parmesan

    1. Lay the remaining asparagus on a parchment-lined baking sheet in a single layer.
    2. Drizzle with 1 tbsp olive oil and toss so they are lightly coated.
    3. Sprinkle with salt, pepper and Parmesan.
    4. Bake 8–10 minutes until tender but still crisp and the Parmesan is lightly golden.
    5. Serve right away with a little extra lemon and another sprinkle of Parmesan if you like.
