Gregada – Croatian Adriatic fish stew | NordMad

A simple Dalmatian fish stew with white wine, potatoes and fresh parsley. Gregada is pure Hvar tradition — and surprisingly easy to make at home with local fish.

Ingredients

  • 800 g white fish (cod, monkfish or haddock), in large pieces
  • 400 g potatoes, sliced
  • 2 stk onions, thinly sliced
  • 4 fed garlic, sliced
  • 200 ml dry white wine
  • 4 spsk olive oil
  • 1 bundt fresh parsley, roughly chopped
  • 2 stk bay leaves
  • 1 efter smag salt and pepper

Instructions

    Layer potatoes and onion

    1. Layer potato slices, onion rings and garlic in a wide pot. Season with salt and pepper.

    Add fish and liquid

    1. Place the fish pieces on top. Pour over the wine and olive oil. Add bay leaves and half the parsley.

    Simmer gently

    1. Cover and simmer on low heat for 25–30 minutes. Shake the pot occasionally — do not stir.
    2. Top with the remaining parsley and serve directly from the pot.

Tips

Cooking

  • Never stir a gregada — gently shake the pot so the fish keeps its shape.

Serving

  • Serve with bread to soak up the sauce — just like by the Adriatic.
