Halloumi saganaki – pan-fried Cypriot cheese

Golden slices of Cypriot halloumi with lemon. Saganaki is the Greek technique of frying cheese in a small pan; this version uses halloumi from Cyprus.

Ingredients

  • 400 g Cypriot halloumi
  • 3 spsk All-purpose flour
  • 2 spsk Olive oil
  • 1 stk Lemon, cut into wedges
  • 1 spsk Fresh oregano or mint

    Prepare the cheese

    1. Cut the halloumi into slices about 1 cm thick. Pat dry and lightly coat in flour.

    Fry until golden

    1. Heat oil in a small pan over medium-high heat. Fry the halloumi for 2–3 minutes on each side until golden.

    1. Squeeze lemon over the hot cheese and scatter with fresh herbs. Serve immediately.
