    • about 0.8 cup Milk
    • 2 stk Eggs
    • 1.4 oz Butter
    • 1.8 oz Sugar
    • about 0.2 oz Instant yeast
    • ½ tsp Salt
    • cup Frying oil
    • 3.5 oz Sugar for coating

    Make and rise the dough

    1. Warm the milk slightly. Dissolve the yeast with a little of the sugar in the milk. Mix the flour, remaining sugar and salt. Add the yeast mixture, eggs and melted butter, and knead into a soft, slightly sticky dough.
    2. Cover the dough and let it rise in a warm place until roughly doubled (60–90 min).

    Shape and proof

    1. Divide the dough into about 12 even pieces (for the stated servings), shape soft balls, and place on oiled parchment. Let them proof until puffy (about 20–40 min).

    Fry and coat in sugar

    1. Heat the oil to about 180 °C (keep about 175–185 °C). Fry the balls in batches, turning once, until puffed and evenly golden (about 2–3 minutes total).
    2. Drain briefly, then toss in sugar while still warm.
