Vanilla ice cream
- 1⅔ cup Double cream
- about 0.8 cup Whole milk
- 5.3 oz Sugar
- 4 stk Egg yolks
- 1 tsp Vanilla extract
Honeycomb
- 3.5 oz Sugar
- 3 tbsp Golden syrup
- 1½ tsp Bicarbonate of soda

Heat cream and milk
- Heat cream and milk. Whisk egg yolks and sugar. Pour hot cream into the yolk mixture while whisking. Return to the pan and stir over low heat until thickened. Add vanilla and cool.

Churn in an ice cream maker
- Churn in an ice cream maker, or freeze in a container and stir through 2–3 times during freezing.

Make honeycomb: cook sugar and syrup
- Make honeycomb: cook sugar and syrup to a golden caramel. Remove from heat and whisk in bicarb — it will foam up. Pour onto baking paper and let set. Crush into pieces.

Fold honeycomb pieces into the semi-frozen ice cream
- Fold honeycomb pieces into the semi-frozen ice cream. Freeze until firm.
