Crispy on the outside, soft on the inside — classic homemade French fries. Well suited to everything from sausages and burgers to salads.

- 1.8 lb Large baking potatoes
- 4¼ cup Oil for frying (e.g. rapeseed or sunflower)
- 1 tsp Salt
Optional topping
- 1 tbsp Fresh herbs (parsley or thyme)
Instructions

Cut and soak the potatoes
- Peel the potatoes and cut them into sticks of about 1 cm.
- Place the sticks in cold water for at least 30 minutes to rinse off starch.

Dry the potatoes thoroughly
- Drain the water and pat the potato sticks completely dry with kitchen paper.
- The drier they are, the crispier the fries will be.

First fry
- Heat the oil to 160°C in a pot.
- Pre-fry the chips in small batches for 4–5 minutes, without letting them colour.
- Remove and let them drain on kitchen paper.

Second fry
- Increase the oil temperature to 190°C.
- Fry until golden and crispy, 2–3 minutes.
- Let them drain on kitchen paper.

Season and serve
- Sprinkle with salt (and herbs, if you like) while still hot.
- Serve straight away — they are at their best right now.
