Homemade French fries | Nordmad

Crispy on the outside, soft on the inside — classic homemade French fries. Well suited to everything from sausages and burgers to salads.

    • 1.8 lb Large baking potatoes
    • cup Oil for frying (e.g. rapeseed or sunflower)
    • 1 tsp Salt
  • Optional topping

    • 1 tbsp Fresh herbs (parsley or thyme)

    Cut and soak the potatoes

    1. Peel the potatoes and cut them into sticks of about 1 cm.
    2. Place the sticks in cold water for at least 30 minutes to rinse off starch.

    Dry the potatoes thoroughly

    1. Drain the water and pat the potato sticks completely dry with kitchen paper.
    2. The drier they are, the crispier the fries will be.

    First fry

    1. Heat the oil to 160°C in a pot.
    2. Pre-fry the chips in small batches for 4–5 minutes, without letting them colour.
    3. Remove and let them drain on kitchen paper.

    Second fry

    1. Increase the oil temperature to 190°C.
    2. Fry until golden and crispy, 2–3 minutes.
    3. Let them drain on kitchen paper.

    Season and serve

    1. Sprinkle with salt (and herbs, if you like) while still hot.
    2. Serve straight away — they are at their best right now.

  • Method: Par-fry (160°C), cool completely and freeze in a single layer. Then transfer to a bag.

  • Oven: Heat 8–12 minutes on a hot baking tray until crisp again. (220°C)

Tips

Preparation

  • You can also bake the fries in the oven: 220°C for 25–30 minutes with a little oil.
  • Place the cut potatoes in water overnight — it makes them extra crispy.
