Dough
- about 1.1 cup water (lukewarm)
- about 0.4 cup milk (lukewarm)
- 0.9 oz yeast
- 2 tbsp olive oil
- 1 tsp sugar
- 1½ tsp salt
- 1.1 lb plain flour
Egg wash
- 1 stk egg
Instructions

Mix the dough
- Dissolve the yeast in lukewarm water and milk in a large bowl.
- Add sugar, oil and salt.
- Stir in the flour a little at a time until the dough is smooth and slightly sticky.

Prove the dough
- Cover the bowl with a tea towel.
- Leave the dough to rise in a warm place for about 1 hour until doubled in size.

Shape the rolls
- Divide the dough into 6–8 equal pieces.
- Shape them into oblong rolls and place on a baking tray lined with parchment.
- Leave the rolls to prove for about 20 minutes.

Baking
- Brush the rolls with beaten egg.
- Bake at 200°C (conventional oven) for 12–15 minutes until golden and lightly crisp on top.

Cool
- Leave the rolls to cool slightly on a wire rack.
- Only slice them when they are warm but not hot.
