    • about 1.1 cup water (lukewarm)
    • about 0.4 cup milk (lukewarm)
    • 0.9 oz yeast
    • 2 tbsp olive oil
    • 1 tsp sugar
    • tsp salt
    • 1.1 lb plain flour

Instructions

    Mix the dough

    1. Dissolve the yeast in lukewarm water and milk in a large bowl.
    2. Add sugar, oil and salt.
    3. Stir in the flour a little at a time until the dough is smooth and slightly sticky.

    Prove the dough

    1. Cover the bowl with a tea towel.
    2. Leave the dough to rise in a warm place for about 1 hour until doubled in size.

    Shape the rolls

    1. Divide the dough into 6–8 equal pieces.
    2. Shape them into oblong rolls and place on a baking tray lined with parchment.
    3. Leave the rolls to prove for about 20 minutes.

    Baking

    1. Brush the rolls with beaten egg.
    2. Bake at 200°C (conventional oven) for 12–15 minutes until golden and lightly crisp on top.

    Cool

    1. Leave the rolls to cool slightly on a wire rack.
    2. Only slice them when they are warm but not hot.
