Carrot sausages
- 6 stk carrots (straight and firm)
Marinade
- 3 tbsp soy sauce
- 2 tbsp olive oil
- 1 tbsp maple syrup or honey
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ¼ tsp pepper
Hotdogs and toppings
- 6 stk hotdog buns (wholegrain if you like)
- 3 tbsp mustard
- 3 tbsp ketchup
- about 1.1 oz crispy fried onions
- 6 skiver pickled cucumber slices
- 2 tbsp fresh chives or cress

Prepare the carrots
- Peel the carrots and boil them gently for 5–7 minutes, until tender but still firm.

Make the marinade
- Whisk soy sauce, oil, maple syrup, apple cider vinegar, smoked paprika, garlic powder and pepper together in a bowl.

Marinate the carrots
- Place the boiled carrots in the marinade, cover and let them soak for at least 4 hours – overnight in the fridge works well.

Fry the carrot sausages
- Heat a pan and fry the carrots in a little of the marinade until caramelised and golden.

Serve the hotdogs
- Place the warm carrot sausages in buns and top with mustard, ketchup, crispy fried onions, pickled cucumber and fresh cress.
