- 4 stk Eggplants
- 6 spsk Olive oil
- 3 stk Onions, thinly sliced
- 4 fed Garlic, sliced
- 400 g Chopped tomatoes
- 1 spsk Tomato paste
- 1 tsk Sugar
- 25 g Fresh parsley, chopped
- 1 spsk Lemon juice
- 1 tsk Salt and black pepper

Prepare the eggplants
- Heat the oven to 200°C. Halve the eggplants lengthways, deeply score the flesh, and brush with 2 tbsp oil. Bake cut-side up for 25 minutes.

Make the onion filling
- Gently cook the onions and garlic in the remaining oil for 15 minutes. Add tomatoes, tomato paste, sugar, salt, and pepper, then simmer for 10 minutes. Stir through parsley and lemon.

Fill and finish baking
- Press a hollow into each eggplant, fill with the onion mixture, and bake for a further 15–20 minutes. Rest for 15 minutes before serving.
