    • 1.1 lb Bone-in lamb (shoulder or neck)
    • 3 stk Potatoes, diced
    • 2 stk Carrots, sliced
    • 1 stk Rutabaga, diced
    • 1 stk Onion, diced
    • 6⅓ cup Water
    • 1 håndfuld Fresh herbs (thyme, oregano)

    Place lamb in a large pot

    1. Place lamb in a large pot with water. Bring to a boil and skim.

    Add onion and herbs, and simmer until the meat softens

    1. Add onion and herbs. Simmer gently until the meat begins to loosen from the bone and feels tender (overall cooking time for the soup is about 1½ hours, following traditional kjötsúpa practice).

    Add the vegetables

    1. Add potatoes, carrots and rutabaga. Continue cooking about 20 minutes until the vegetables are tender, within the overall cooking time of about 1½ hours.
  4. 4

    Remove meat, pull from the bone

    1. Lift out the meat when it is tender enough to pull from the bone. Pull from the bone, return it to the soup, season to taste and serve.
