An unexpected, impressive dish made straight over the fire: classic lasagne cooked in a cast-iron pot with embers above and below. Slow heat gives deep flavour and a well-browned top.

Meat sauce
- 14.1 oz Minced beef
- 1 stk Onion, finely chopped
- 2 fed Garlic, finely chopped
- 1 dåse Chopped tomatoes
- 2 tbsp Tomato purée
- 1 tsp Oregano
- 1 tsp Salt
- ½ tsp Pepper
- 1 tbsp Olive oil or rapeseed oil
Béchamel sauce
- 1.4 oz Butter
- 3 tbsp Wheat flour
- 2⅛ cup Milk
- ½ tsp Salt
Lasagne
- 8 stk Lasagne sheets
- 5.3 oz Grated cheese

Make the meat sauce
- Heat the oil in the cast-iron pot over the embers, and soften the onion and garlic.
- Add the beef and brown it well.
- Stir in tomato purée, chopped tomatoes, oregano, salt and pepper.
- Let the sauce simmer gently while you make the béchamel.

Make the béchamel
- Melt the butter in another pot.
- Stir in the flour and cook it briefly.
- Add the milk a little at a time and stir until the sauce is smooth.
- Season with salt.

Assemble the lasagne
- Spread a layer of meat sauce in the bottom of the cast-iron pot.
- Add lasagne sheets and spread béchamel over them.
- Repeat the layers and finish with béchamel and grated cheese.

Bake over the fire
- Put the lid on the pot.
- Place embers under the pot and a layer of embers on the lid.
- Bake until the lasagne is cooked through and golden on top.
