Salmon
- 4 stk salmon fillets (approx. 150 g each)
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
Glaze
- 3 tbsp maple syrup
- 1 tbsp soy sauce
- 1 tbsp Dijon mustard
- 1 fed garlic clove, pressed
- 1 tbsp lemon juice

Make the glaze
- Combine maple syrup, soy sauce, Dijon mustard, garlic and lemon juice in a bowl.

Sear the salmon
- Season salmon fillets with salt and pepper. Heat oil in a pan over high heat. Sear salmon skin-side down for 3 minutes until crispy.

Glaze and finish
- Flip the salmon. Pour the glaze over and let it simmer for 4-5 minutes on medium heat until the salmon is cooked through and the glaze has reduced.
- Spoon the glaze over the salmon a couple of times while cooking to build a beautiful, glossy layer.
