- 5 stk Eggs
- 2 spsk Olive oil
- 1 stk Green pepper, finely diced
- 400 g Ripe tomatoes, roughly chopped
- 15 g Butter
- 0.5 tsk Salt
- 0.3 tsk Chili flakes, optional
- 1 spsk Fresh parsley, chopped

Cook the pepper
- Heat the oil in a wide skillet and cook the pepper over medium heat for 4–5 minutes.

Cook down the tomatoes
- Add the tomatoes, salt, and optional chili. Cook for 6–8 minutes until juicy but not watery.

Fold in the eggs
- Lightly beat the eggs. Add the butter and eggs, then stir gently until just set. Finish with parsley.
