  • 2 spsk Olive oil
  • 1 stk Green pepper, finely diced
  • 400 g Ripe tomatoes, roughly chopped
  • 15 g Butter
  • 0.5 tsk Salt
  • 0.3 tsk Chili flakes, optional
  • 1 spsk Fresh parsley, chopped

    Cook the pepper

    1. Heat the oil in a wide skillet and cook the pepper over medium heat for 4–5 minutes.

    Cook down the tomatoes

    1. Add the tomatoes, salt, and optional chili. Cook for 6–8 minutes until juicy but not watery.

    1. Lightly beat the eggs. Add the butter and eggs, then stir gently until just set. Finish with parsley.
