  • 1 stk Carrot, roughly chopped
  • 1 stk Potato, diced
  • 2 spsk Olive oil
  • 1 spsk Tomato paste
  • 1 tsk Ground cumin
  • 1 tsk Sweet paprika
  • 1200 ml Vegetable stock
  • 2 spsk Lemon juice
  • 1 tsk Salt and black pepper
  • 1 tsk Dried mint, to serve

    Sauté the vegetables

    1. Heat the oil in a pot. Cook the onion, carrot, and potato for 5 minutes without browning.

    1. Stir in the tomato paste and spices. Add the lentils and stock, then simmer covered for 20–25 minutes.
