- 250 g Red lentils, rinsed
- 1 stk Onion, roughly chopped
- 1 stk Carrot, roughly chopped
- 1 stk Potato, diced
- 2 spsk Olive oil
- 1 spsk Tomato paste
- 1 tsk Ground cumin
- 1 tsk Sweet paprika
- 1200 ml Vegetable stock
- 2 spsk Lemon juice
- 1 tsk Salt and black pepper
- 1 tsk Dried mint, to serve

Sauté the vegetables
- Heat the oil in a pot. Cook the onion, carrot, and potato for 5 minutes without browning.

Simmer the soup
- Stir in the tomato paste and spices. Add the lentils and stock, then simmer covered for 20–25 minutes.

Blend and serve
- Blend until smooth, then season with lemon, salt, and pepper. Serve with dried mint.
