Sweeter and denser than classic bagels – boiled in honey water and baked at high heat for a lightly caramelised crust. Inspired by Montreal's famous bagel tradition.

    • 1.1 lb bread flour
    • 2 tbsp honey
    • 1 stk egg
    • about 0.2 oz instant yeast
    • tsp salt
    • about 0.8 cup lukewarm water
    • 2 tbsp neutral oil
  • Boiling liquid

    • 3 tbsp honey
  • Topping

    • 4 tbsp sesame seeds
    • 4 tbsp poppy seeds

    Make the dough

    1. Combine flour, yeast and salt. Add honey, egg, oil and water. Knead for 10 minutes into a smooth, firm dough.
    2. Let the dough rise, covered, for 1 hour until doubled in size.

    Shape the bagels

    1. Divide dough into 8 pieces. Roll each piece into a rope of about 25 cm and form into a ring. Press the ends firmly together.

    Boil the bagels

    1. Bring a large pot of water to a boil with honey. Boil 2-3 bagels at a time for 1 minute per side. Remove with a slotted spoon.
    2. Coat the boiled bagels in sesame or poppy seeds while still wet.

    Bake the bagels

    1. Place bagels on a baking tray lined with parchment. Bake at 240 °C for 12-15 minutes until golden.

Tips

Preparation

  • The dough should be firm – much firmer than regular bread dough. Only add more water if it's completely dry.
