  • Potatoes

    • 1000 g new potatoes
    • 1 spsk salt
    • 2 spsk butter or oil
    • 1 spsk lemon juice (optional)
  • Chive cream

    • 2 dl yoghurt (plain or low-fat)
    • 1 håndfuld fresh chives
    • 0.5 fed garlic
    • 0.5 tsk salt
    • 1 tsk lemon juice or vinegar
  • Garlic butter

    • 100 g soft butter
    • 2 fed garlic
    • 1 knsp salt
  • Bean patties

    • 1 dåse chickpeas, drained
    • 1 dåse white beans or butter beans
    • 1 stk onion
    • 1 stk carrot
    • 2 fed garlic
    • 2 spsk oil
    • 2 spsk flour or breadcrumbs
    • 0.5 tsk bouillon powder
    • 1 tsk salt

    Boil the potatoes

    1. Rinse the potatoes well under cold water and brush off any soil.
    2. Bring a large pot of water to a boil and add 1 tbsp salt.
    3. Add the potatoes and boil 15–20 minutes until tender (test with a small knife).

    Steam the potatoes dry and gloss them

    1. Drain in a colander.
    2. Return the potatoes to the warm pot without a lid and let them steam dry for 5 minutes.
    3. Toss the potatoes with 2 tbsp butter or oil. Add 1 tbsp lemon juice if you like.

    Make the chive cream

    1. Chop the chives finely.
    2. Stir yoghurt with chives, 1/2 clove finely grated garlic, 1/2 tsp salt and 1 tsp lemon juice/vinegar.
    3. Taste: more lemon for freshness or a pinch of salt for balance. Chill.

    Mix the garlic butter

    1. Put the soft butter in a bowl.
    2. Crush or grate 2 cloves of garlic finely and stir into the butter with a pinch of salt.
    3. Scrape the butter into a small mound and chill until serving.

    Make the bean patty mix

    1. Drain chickpeas and white beans well in a colander and let them drip for 1–2 minutes.
    2. Finely chop the onion, grate the carrot finely, and crush or grate 2 cloves of garlic.
    3. Mash chickpeas and beans coarsely in a bowl with a fork.
    4. Stir in onion, carrot, garlic, 2 tbsp oil, 2 tbsp flour/breadcrumbs, 1/2 tsp bouillon powder and 1 tsp salt.
    5. Let the mix stand 2 minutes so the flour/breadcrumbs can absorb moisture. Add a little more flour/breadcrumbs if it feels very soft.

    Shape the patties

    1. Damp your hands lightly with water or a little oil.
    2. Shape about 8 small patties and press them gently flat (about 1.5 cm thick).
    3. Place the patties on a plate ready for the pan.

    Fry the bean patties

    1. Heat a pan over medium heat and add a little oil (from the 2 tbsp, if you have not already used it all in the mix).
    2. Add the patties and fry 3–4 minutes on the first side without moving them.
    3. Turn carefully and fry 3–4 minutes on the other side until golden and crisp.
