- 250 g egg noodles
- 1 stk red bell pepper
- 2 stk carrots
- 100 g snow peas
- 1 stk red onion
- 2 stk scallions
- 1 spsk fresh ginger (grated)
- 3 spsk soy sauce
- 1 spsk sesame oil
- 0.5 stk lime (juice)
- 1 spsk oil for frying
- 1 spsk sesame seeds (for topping)
- 1 håndfuld fresh cilantro or parsley (for garnish)

Cook the noodles
- Cook the noodles according to the package, drain, and rinse them lightly in cold water.
- Day-old cooked noodles also work and often hold up better in the wok.

Prep the vegetables
- Cut the bell pepper, carrots and snow peas into strips. Roughly chop the red onion and scallions.
- Keep the pieces similar in size so they cook evenly.

Cook the eggs
- Beat the eggs lightly and scramble them in a little oil. Take them off the heat while still softly set.
- Soft eggs fold into the noodles without drying out.

Stir-fry the vegetables
- Heat oil in a large wok or pan. Cook red onion, ginger, carrots and bell pepper for 3–4 minutes until lightly crisp.
- High heat keeps the vegetables bright with a little bite.

Bring everything together
- Add noodles, soy sauce, sesame oil, snow peas and scallions. Toss well. Fold in the eggs last.
- Work quickly so the noodles warm through without going soft.

- Taste with lime juice and a little extra soy if needed. Serve right away with sesame seeds and fresh parsley or cilantro on top.
- Lime brightens the soy and sesame at the end.
