  • 250 g egg noodles
  • 1 stk red bell pepper
  • 2 stk carrots
  • 100 g snow peas
  • 1 stk red onion
  • 2 stk scallions
  • 1 spsk fresh ginger (grated)
  • 3 spsk soy sauce
  • 1 spsk sesame oil
  • 0.5 stk lime (juice)
  • 1 spsk oil for frying
  • 1 spsk sesame seeds (for topping)
  • 1 håndfuld fresh cilantro or parsley (for garnish)

    Cook the noodles

    1. Cook the noodles according to the package, drain, and rinse them lightly in cold water.

    Prep the vegetables

    1. Cut the bell pepper, carrots and snow peas into strips. Roughly chop the red onion and scallions.
    2. Keep the pieces similar in size so they cook evenly.

    Cook the eggs

    1. Beat the eggs lightly and scramble them in a little oil. Take them off the heat while still softly set.
    2. Soft eggs fold into the noodles without drying out.

    Stir-fry the vegetables

    1. Heat oil in a large wok or pan. Cook red onion, ginger, carrots and bell pepper for 3–4 minutes until lightly crisp.

    1. Add noodles, soy sauce, sesame oil, snow peas and scallions. Toss well. Fold in the eggs last.
