A quick noodle wok with sweet chili, lime and plenty of vegetables. The sauce is sticky and bright, and everything comes together in one pan.

- 7.1 oz noodles (egg-free, e.g. rice noodles)
- 1 tbsp oil (rapeseed or sesame)
- 1 stk red onion
- 2 fed garlic
- 1 stk red bell pepper
- 2 stk carrots
- 0.5 stk zucchini
- 3.5 oz sugar snap peas or green beans
- 1 håndfuld fresh coriander or parsley (optional)
- 3 tbsp sweet chili sauce
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp fresh ginger, grated
- 1 tsp honey or syrup

Cook the noodles
- Cook the noodles according to the package, drain and rinse in cold water.
- Make sure they do not stick together – add a little oil if needed.

Make the sauce
- Stir the chili sauce, soy sauce, lime, ginger and honey together in a bowl.
- Adjust with extra lime for freshness if you like.

Stir-fry the vegetables
- Heat the oil in a wok, fry onion, garlic and ginger for 1–2 minutes. Then add bell pepper, carrots, zucchini and sugar snap peas.
- The vegetables should be hot but still crisp.

- Toss the noodles and sauce into the wok and heat through.
- Stir regularly so the sauce coats everything and caramelises lightly.
