  • 1 tbsp oil (rapeseed or sesame)
  • 1 stk red onion
  • 2 fed garlic
  • 1 stk red bell pepper
  • 2 stk carrots
  • 0.5 stk zucchini
  • 3.5 oz sugar snap peas or green beans
  • 1 håndfuld fresh coriander or parsley (optional)
  • 3 tbsp sweet chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp fresh ginger, grated
  • 1 tsp honey or syrup

    Cook the noodles

    1. Cook the noodles according to the package, drain and rinse in cold water.
    2. Make sure they do not stick together – add a little oil if needed.

    Make the sauce

    1. Stir the chili sauce, soy sauce, lime, ginger and honey together in a bowl.
    2. Adjust with extra lime for freshness if you like.

    Stir-fry the vegetables

    1. Heat the oil in a wok, fry onion, garlic and ginger for 1–2 minutes. Then add bell pepper, carrots, zucchini and sugar snap peas.

    1. Toss the noodles and sauce into the wok and heat through.
