Pork in a roasting dish
- 1.3 lb Pork loin or neck chops
- 14.1 oz Potatoes in wedges
- 10.6 oz Carrots in large pieces
- 1 stk Red onion in wedges
- 2 tbsp Oil
- 1 tsp Dried rosemary
- 1 tsp Salt
- ½ tsp Pepper
Instructions

Prepare the roasting dish
- Preheat the oven or lidded grill to about 200°C.
- Toss potatoes, carrots and onion with oil, salt and pepper in a roasting dish.

Add the pork
- Place the pork on top of the root vegetables.
- Sprinkle with rosemary and a little extra salt.
- Bake for about 35–40 minutes until the meat is cooked through and the vegetables are tender.

Rest and serve
- Let the dish rest for 5 minutes before serving.
- Serve straight from the roasting dish.
