    • 1.3 lb Pork loin or neck chops
    • 14.1 oz Potatoes in wedges
    • 10.6 oz Carrots in large pieces
    • 1 stk Red onion in wedges
    • 2 tbsp Oil
    • 1 tsp Dried rosemary
    • 1 tsp Salt
    • ½ tsp Pepper

    Prepare the roasting dish

    1. Preheat the oven or lidded grill to about 200°C.
    2. Toss potatoes, carrots and onion with oil, salt and pepper in a roasting dish.

    Add the pork

    1. Place the pork on top of the root vegetables.
    2. Sprinkle with rosemary and a little extra salt.
    3. Bake for about 35–40 minutes until the meat is cooked through and the vegetables are tender.

    1. Let the dish rest for 5 minutes before serving.
    2. Serve straight from the roasting dish.
