    • 1 stk pointed cabbage (or white cabbage)
    • 3 stk carrots
    • 1 stk red onion
    • 1 stk broccoli
    • 3 tbsp olive oil
    • 1 tsp salt
    • ½ tsp freshly ground pepper
    • ½ tsp paprika
    • 0.5 stk lemon (zest)
  • Yoghurt dressing

    • 5.3 oz Greek yoghurt (10%)
    • 1 fed garlic (pressed)
    • 1 tsp honey
    • 1 tbsp lemon (juice)
    • 1 tbsp fresh parsley or dill (finely chopped)
    • ¼ tsp salt
    • ¼ tsp pepper

    Preheat the oven

    1. Preheat the oven to 200°C (convection).

    Prepare the vegetables

    1. Quarter the cabbage, cut carrots into sticks, red onion into wedges and break the broccoli into florets. Place everything on a baking tray lined with baking paper.

    Season and bake

    1. Drizzle olive oil over the vegetables and season with salt, pepper, paprika and lemon zest. Bake in the oven for 25–30 minutes until the vegetables are golden and tender.

    1. Stir together yoghurt, garlic, honey, lemon, herbs, salt and pepper. Taste and refrigerate.
