    • 1.3 lb Carrots
  • Marinade

    • 1 tsp Honey
    • 0.5 stk Lemon (juice)
    • 2 tbsp Olive oil (adjust as needed)
    • 1 tsp Salt
    • ¼ tsp Freshly ground pepper
    • 1 tsp Fresh thyme, finely chopped
  • Herb butter (for serving)

    • 1.4 oz Soft butter
    • 1 tbsp Fresh herbs (such as thyme, parsley or dill), finely chopped

    Prepare the carrots

    1. Peel the carrots.
    2. Cut them lengthwise in half, and into quarters if very thick.
    3. The goal is roughly even thickness, so they bake evenly.

    Make the marinade

    1. Squeeze the juice from half a lemon into a bowl.
    2. Add honey, salt, pepper and finely chopped thyme.
    3. Stir together and add olive oil a little at a time.
    4. The marinade should be fluid and easy to work with – not thick.

    Toss the carrots in the marinade

    1. Put the carrots in a large freezer bag or bowl.
    2. Pour the marinade over.
    3. Close the bag and massage the carrots thoroughly so they are coated all over.
    4. Add a touch more oil if it makes the marinade easier to spread.

    Spread on baking tray

    1. Tip the carrots onto a baking tray or into an oven-proof dish.
    2. Spread them in a single layer with a little space between them.

    Roast the carrots

    1. Roast the carrots in the middle of the oven at 200°C.
    2. Turn them after about 15 minutes.
    3. Roast until tender and lightly caramelised at the edges.

    1. Mix the soft butter with the finely chopped herbs.
    2. Top the warm carrots with small dollops of herb butter just before serving.
